Summertime is all about eating foods that are fresh and flavorful. This Cantaloupe, Prosciutto and Arugula Salad is bursting with unique tastes. I love how the fruit adds a natural sweetness. The salad hits all the sweet and savory notes with the sweet cantaloupe, salty prosciutto and peppery arugula. I also am a huge fan of the white-wine vinaigrette…I even saved the leftover dressing to use again!
My boyfriend and I paired the salad with Honey Mustard Turkey Burgers. The whole meal was a great way to kick off the official start of summer! I found myself debating on which bite to take next, the burger or the salad!
- 1 medium cantaloupe
- 8 oz baby arugula
- 6-8 thin slice prosciutto
- 3 tablespoon white-wine vinegar
- 1 clove garlic
- 1 tablespoon honey
- 1 teaspoon dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup olive oil
- Combine vinegar, honey, mustard, garlic, salt, and pepper. Whisk continuously while slowly adding olive oil.
- Place arugula on a platter. Top with cantaloupe, prosciutto and drizzle with vinaigrette.
