Gourmet Gab: On the Go – Episode 2

To this day, when I am cooking in the kitchen with my dad he always says, “Gabs, watch your fingers with that knife!” From a young age, I realized that I was going to have to learn my proper knife skills so he would trust me. Years later what I found in college, though, is not everyone learned those same skills. Many people on the go resort to precut packages of fruits and veggies to save time, but really they’re only spending more money! In this episode of Gourmet Gab: On the Go, I got the chance to go into the POSH Restaurant kitchen in Scottsdale and learn knife skills from Chef Joshua Hebert. I have to admit, it was a little scary watching one of my best friends, Grace, put her fingers that close to the big knife. The lesson we can all take away is that regardless of your age or experience, once you’ve learned how to use knives (big or small) properly, there is nothing to fear.

In the second part of this episode, Grace and I head into the kitchen to make four meals in one day! Well, essentially what we do is utilize a Sunday afternoon, when productivity is typically not at its highest, to make one batch of ground turkey that can be used four different times throughout the week. Two meals are a whole grain pasta with a meat sauce and the other two are a healthy taco salad. I love using Sundays to get my meals and snacks prepped for the week so I don’t have to think twice during hectic days.

Ground Turkey with Peppers and Onions

  • 1 pound of lean ground turkey
  • 1 diced red pepper
  • 1 diced green pepper
  • 1 diced onion
  • 1 teaspoon olive oil
  • salt and pepper
  1. Heat a pan to medium high heat. Add olive oil and veggies. Season with salt and pepper.
  2. Sauté for about five minutes or until softened and onions are almost transparent.
  3. Add ground turkey. Sauté until turkey is browned.
  4. Drain fat if needed.

Easy Pasta with Meat Sauce

  • 1 pound of whole grain rotini
  • 1 jar of plain marinara sauce
  • Half of ground turkey with peppers and onions (above)
  1. Cook pasta according to box instructions.
  2. Pour jar of marinara sauce in a medium sauce pan. Simmer until warmed. Add half of browned ground and stir.
  3. Serve pasta with sauce on top. Enjoy!
  4. Save the leftovers in a tupperware for another day.

Healthy Taco Salad

  • 1 bag of mixed greens or baby spinach
  • 1/2 cup of black beans, drained and rinsed
  • 1 avocado, diced
  • 2 tablespoons plain Greek yogurt
  • 4 tablespoons salsa
  • Half of ground turkey with peppers and onions (above)
  1. Add half a bag of mixed greens or baby spinach to a bowl or plate. Top with half of the leftover ground turkey with peppers and onions, 1/4 cup of black beans and half of the diced avocado.
  2. Top with 1 tablespoon of Greek yogurt and 2 tablespoons of salsa. Enjoy!
  3. Save the rest in a tupperware for another day. Save to top with yogurt and salsa until immediately before eating.
