Lately I’ve been going on mini vacations to visit friends and family. I always like to leave a little thank you gift behind. This Buttermilk Chocolate Chip Pancake Mix is a delicious way to say “thank-you!” All the recipients have to do is add some buttermilk, eggs and butter to the mix.
I have to admit, I totally copied Joy the Baker on this one. But, how could one not copy Joy’s recipes? She’s a baking rockstar with a fabulous blog.
I kept things simple and just mixed everything up in the Mason Jar: flour, sugar, baking soda, baking powder and cinnamon. On Joy’s post you’ll also read about her Anthropologie measuring cups. Coincidentally I used my new favorite measuring cups, too! Alexander got these for me for my birthday. They make baking look 10 times cuter.

Package your mix with whatever you have around the house. I spruced up the Mason Jar with some gingham ribbon. Then I wrote the recipe with stamps and a colored marker, and then folded it up.
