Everything Bagel Egg Bake

Store-bought biscuit dough is the star of this egg bake loaded with eggs, crispy bacon and Cheddar cheese! The finishing touch: Using the rendered bacon grease to brush the top of the golden brown biscuits to add a glistening shine (and extra bacon flavor!!) before serving.

Why Everything Bagel Seasoning?

This egg bake is inspired by the pull-apart caramel rolls my mom’s side of the family always makes for brunches and holidays! We usually toss the biscuit dough in cinnamon sugar and coat it in a super easy caramel sauce before baking. I imagined a savory version that I could make into an egg bake and this version came to life! Tossing the store-bought biscuit dough in the everything bagel seasoning not only adds so much flavor from the combination of poppy and sesame seeds, plus minced dried garlic and onion, but it also adds such a nice texture when it gets crispy on the biscuits. Everything bagel seasoning usually has flaky salt, so the amount of salt in the egg mixture is reduced to level out. If you don’t have everything bagel seasoning on hand, you can totally make it without, you just might want to increase the amount of salt slightly in the egg mixture.

Which Biscuits to Use?

Almost any store-bought biscuit dough would work in this egg bake, but I would recommend Pillsbury™ Flaky Layers Buttermilk Biscuits vs. the Pillsbury™ Grands!™ because the Grands!™ end up being almost too large in proportion to the eggs! I’ve also used the Trader Joe’s Organic Biscuits (as seen in my Instagram video) and they were perfect. Cutting each biscuit into 6 pieces (instead of 4 pieces like I usually would do for pull-apart caramel rolls or monkey bread) is recommended because it’s much easier to take a bite of the egg bake when the pieces are not as big.

Can you make this ahead?

This egg bake holds up very well in the fridge for 2-3 days after baking. When you’re hungry, reheat a slice in the oven as needed to allow the biscuits to remain golden brown and crispy! I personally have not yet tried making it ahead of time and baking in the morning, but all of my research around similar biscuit dough egg bakes (also referred to as “Bubble Ups”) mention you can make this ahead of time and keep in the fridge overnight before baking!

Ingredients

  • Nonstick cooking spray

  • 6 slices bacon

  • One 12 or 16-ounce tube store-bought biscuits

  • 3 tablespoons everything bagel seasoning

  • 8 large eggs

  • Kosher salt and freshly ground black pepper

  • Freshly grated nutmeg, optional

  • 1 cup whole milk

  • 2 cups freshly grated cheddar cheese

  • 2 scallions, greens only, sliced

Directions

  • Preheat oven to 350 degrees F. Grease a 9×13 pan with nonstick cooking spray.
  • Cut the bacon into 1/2” pieces. Place in a cold pan and cook over medium heat until crisp, 8 to 10 minutes. Remove with a slotted spoon to a plate lined with paper towel to drain excess grease. Reserve bacon fat for later.
  • While bacon is cooking, cut each biscuit into 6 pieces. Toss half of the pieces of biscuit dough in everything bagel seasoning. Leave the other half plain. Scatter the biscuits in the prepared pan.
  • Whisk eggs, milk, 1/2 teaspoon salt, freshly ground black pepper and a little freshly grated nutmeg if desired in a medium bowl. Stir in cheese and bacon. Pour egg mixture on top of biscuit dough pieces.
  • Bake for 35-40 minutes or until the biscuits are golden brown on top and eggs are fully set. Use a pastry brush to brush the top of the browned biscuits with some of the remaining bacon fat. Top with scallion greens. Slice and serve!
