I’ve been watching Food Network since I was five years old. When I was little, I chose to watch Emeril Lagasse say “BAM!” instead of watch cartoons. Throughout my childhood I entertained myself by filming my own cooking videos. I would stack up board games and cookbooks on my dad’s bongo drums and place our family videocamera right on top. My imagination would take me to “Gabi’s Kitchen” where I would concoct recipes out of random items in the fridge and pantry. For hours I entertained myself and would instruct and tell stories to my (pretend) audience. Today it seems as if everything has come full circle. Right now one of my cooking videos is featured on the Food Network Snapchat Discover channel!
My first video of an upcoming series of four videos (!!!) for Food Network Snapchat Discover is for Green Chile Breakfast Tacos. These breakfast tacos happened spontaneously for dinner one night when I had a can of leftover green chiles sitting in my fridge. The result was delicious! These green chiles are mild, not super spicy like you might think. They add a subtle tangy spice to the scrambled eggs.
While these tacos sound fancy, they take a matter of minutes to make and they’re so inexpensive! A can of green chiles costs about $1 and you probably already have eggs, tortillas and cheese in your fridge. Take the gourmet-factor up another notch with hot sauce and chopped cilantro and “BAM!” – there you have it.

- 3 eggs
- 1 teaspoon olive oil
- 1 can of green chiles, only use about two tablespoons
- 2 tortillas, flour or corn
- 1/8 teaspoon salt
- Pinch of pepper
- 2 tablespoons shredded cheese
- Your favorite hot sauce (optional)
- Chopped cilantro for garnish
- Beat 3 eggs. Season with salt and pepper.
- Warm pan over medium heat. Drizzle with olive oil.
- Add eggs to pan. Cook eggs, stirring gently.
- Add green chiles once eggs are halfway cooked.
- Warm tortillas in the microwave for 10 seconds.
- Add scrambled eggs to tortilla.
- Garnish with shredded cheese, hot sauce and chopped cilantro.
There are so many other ways you could customize this recipe. I am not shy about my love for chorizo and it would be amazing in these breakfast tacos. I will I will try your recipe. I have made these types for years but overload the chilies to a small can and use jalapeño hot sauce which is flavorful but not a killer. . I also add a little pick de gallo to the mixture.
