Why meal prep?
I started casually posting about meal prep a few years ago and fell in love with the way it made me feel so confident for the week! Putting in a few hours upfront on a Sunday saved me so much time throughout the week. I would get home from work tired and hungry and not have to think twice about heating something up having dinner on the table in minutes. When I would wake up in the morning, I would have lunch ready to go so I could grab it from the fridge and head out the door.
Bankin’ those Benjamins
Living in New York now, it’s so easy to pick up a bagel on the way to work, run outside and grab lunch everyday, or order delivery for dinner. There are SO many amazing options at my fingertips all the time… but all that really adds up. Meal prepping has saved me so much money because I proactively think about how to puzzle all my ingredients together and have food ready so I don’t splurge when I’m hungry.
Who’s this for?
These meal preps can be adapted by anyone! Each outline is meant to be for one individual, but you could always double up to make enough for two servings of everything. One of the things I hear most often is that people don’t want to have leftovers or cook a whole recipe that’s intended for four people. These meal preps will guide you through cooking intentionally for five days for one person and won’t leave you feeling sick of anything.
Keeping it Casual
Everything in the guides (including the grocery shopping lists, recipes and meal prep plan) are flexible and can be interpreted with your own spin. I wrote the recipes and directions like I would text a friend. My hope is that you cook them and don’t feel like you’re just reading them, measuring exactly and following directions. I would so much rather you follow your taste buds (Yes!! Taste the food along the way!) and trust your instincts.
Soooo….Sundays?
I dedicate Sunday afternoons to cooking and usually end up winding down before dinner… that’s why I’ve included a Sunday dinner in each guide. It’s the worst feeling wrapping up after cooking for hours, looking into your fridge staring at so much food, yet feeling like you have nothing to eat! You can also break this up into two days if needed.
When Do I Get the Groceries?
Up to you! I will sometimes go to the store on Friday after work or Saturday afternoon so I don’t have to do it all on Sunday. However, it’s totally doable to get it all done in one day.
Dishes + Tupperware
I’m going to be honest – meal prep does make you have a lot more dishes than normal, just because you cook everything at once and then store it in the fridge. If you can, invest in some good storage containers because it will make it so much more fun to store your food and bring it to-go.

Whole30 Inspo
Surprise! Most of the recipes will be free of gluten, dairy, grains, legumes and added sugar. I did the Whole30 challenge for the first time in January and it completely changed the way I think about designing my meals and picking ingredients. These meals are full of protein, healthy fats, fruits and veggies. They will keep you full and, most importantly, not missing any flavor.
