Warm summer weather and swimsuit season call for light lunches that refresh, but still leave you satisfied. I’ve been snacking on Italian Caprese salads lately, which are made of sliced tomatoes, mozzarella, basil, olive oil, balsamic vinegar, S & P. This sandwich fuses the Caprese salad with a classic turkey sandwich. It is quite a masterpiece.
I love how the English muffin mimics the shape of the mozzarella and tomato. As your taste buds experience each layer, you’ll enjoy the sweet, salty and smooth flavors. The zing of the balsamic vinegar is balanced by the creamy avocado. The mozzarella takes the sandwich up a level from traditional American cheese. The sliced Cajun turkey breast I used contributed a kick of spice that was followed by the soothing basil.
Paired with some homemade Roasted Red Pepper Hummus and pita chips…boy was I in Heaven!
Turkey Avocado and Caprese Sandwich Recipe
Ingredients
- 1 whole wheat English muffin
- 6 slices turkey breast meat
- 1 teaspoon good quality balsamic vinegar
- 1 slice tomato
- 1 slice mozzarella cheese
- 3 basil leaves, washed and dried
- 3 slices avocado
Directions
Toast English muffin. Spread balsamic vinegar on one side. Layer cheese, turkey breast, tomato, basil, avocado on top of other side of English muffin. Place both sides together to form sandwich.
