This summer I am bringing back the novelty of ice cream floats, but in an adults-only version spiked with vanilla vodka. When I was little, having any kind of soda was a big treat for me. At sleepovers or birthday parties, I would be giddy to try Sprite or Fanta. When our summer days ended in a Root Beer Float dessert piled high with extra vanilla ice cream, it was heaven. Twenty-plus years later, happy hours and chilled cocktails have become synonymous with summer for me. I’ll definitely be pulling this Vanilla Coke Float recipe out for summer barbecues or backyard bashes.
This drink was so fun to photograph. It was originally inspired by the glass Coke bottles I saw at the store one day. Then I found these adorable mini Coke glasses at the dollar store (seriously!) and new I had to put a photoshoot together. - 1/2 cup Coke, chilled
- 1 shot vanilla vodka
- 1 scoop vanilla ice cream
- Lemon slice for garnish
- In a small glass, stir together the chilled soda and add vanilla vodka. Taste to ensure the strength of the drink meets your taste. If making in a larger glass, double quantities. Be sure to leave a little room in the glass for the ice cream and froth!
- Scoop vanilla ice cream into drink. Garnish with lime slice and a paper straw.
