There are just some mornings where yogurt, smoothies or toast won’t cut it – you need a stack of fluffy pancakes drizzled with real maple syrup. I saw these banana pancakes circling the internet, but was hesitant because I couldn’t wrap my mind around how they worked. I’m here to share that not only do these pancakes actually work, but they are so light, fluffy and perfect for a pancake craving.

I read about them on The Kitchn, which is one of my trusted sources, but I also saw four different ideas for them on Tastemade. I love their ideas of making them into carrot cake pancakes or adding peanut butter and oats – another personal favorite combo. These pancakes are ideal post-workout because of the natural protein, but I’ve also seen people add in a scoop of protein powder for the extra boost! I topped mine with a slather of almond butter and let it melt over the warm pancakes.

One tip is to make them into small circles. The larger they get, the more flimsy they are and don’t quite flip in one piece. One batch makes enough for a stack of four small pancakes! It’s a perfect stack for a morning meal, leaving you feeling full but not stuffed like some pancakes can make you feel. I hope you whip these up this weekend for breakfast and enjoy how quick, easy and delicious they are.

Ingredients

  • 1 ripe banana

  • 1 egg

  • 1/4 teaspoon cinnamon

  • 1 pinch salt

  • A spray of non-stick cooking spray or 1 teaspoon coconut oil

  • Maple syrup, for serving

Directions

  • Mash one banana in a small bowl with a fork.
  • Add one egg and mix well.
  • Add cinnamon and salt. Mix.
  • Warm a nonstick pan over medium heat with non-stick spray or coconut oil.
  • Pour mixture into small circles – batter will make four pancakes.
