The Snack I Never Get Sick Of

There is not a day that goes by where I don’t reach for a snack at about 11:00 am at the office. Having breakfast at 7:00 or 8:00 in the morning usually means my stomach is rumbling a few hours later! Lately things have been pretty crazy in my schedule as I have been working on some big projects and staying up a little too late each night–ahem last night–which makes me even hungrier throughout the day.

You all know that I have a firm love (okay, okay obsession) with peanut butter. I could eat it with a spoon straight from the jar! The snack that I never get sick of is…

…dipping a crisp, sweet apple into a jar of peanut butter.

Apples have great nutritional value, plus a tartness and juiciness to contrast the creamy, smooth peanut butter. Did you know they also give you a boost of energy? Because PB has a lot of healthy fat along with it’s protein, I just need to stay true to my word about “everything in moderation.” It’s easy to get carried away with an endless jar of my favorite spread, so I’ll scoop a heaping tablespoon or so on a plate to dip apples from there so I don’t eat the whole jar :)

My favorite kind of apple is gala. They have a balanced sweet and tartness. My mom bought them for me growing up and I have loved them ever since. Green apples are delicious on appetizers, like this almond butter and fig bruschetta, but a little too tart for me in my everyday life. While I don’t discriminate about peanut butter, I will be sharing my new favorite kind next week with my May Trader Joe’s favorites!
