Breakfast has been an important part of my day since I was a little girl. Every morning I would wake up, get dressed for school and sit in the kitchen eating breakfast while my mom packed my lunch. Some days it would be Eggo waffles with peanut butter and maple syrup, other days yogurt and berries with granola, cereal and peanut butter toast, or – on an important day – poached eggs with toast.
Ever since then, I have continued to start each day with a great breakfast. As I’ve gotten older, I’ve found that while cereal, toast or yogurt is light, I need a heartier, more filling option to sustain me through the work day. I started consistently making eggs before I head to the office and it’s made a big impact on my mornings. Here are five reasons I think you should give them a try.
Eggs are a great source of protein.
One egg has six grams of protein and will help keep you full longer. I make two or three in the morning for breakfast and find myself not getting hungry for several hours!
They are inexpensive.
One dozen of eggs can be less than $2.00! This breakfast is incredibly inexpensive and an easy item to keep stored in the fridge.
You can take them to-go.
Have you ever tried making scrambled eggs in the microwave? Just scramble a few eggs in a microwave-safe coffee mug and place in the microwave for a minute. Take them out to stir around and microwave again for 30 seconds to cook through. Ta-dah! Easy breakfast that you can also take on the go.
What’s your flavor?
One of my favorite things about eggs is that they are practically a blank canvas. You can flavor them with seasonings, herbs, salsa, hot sauce, vegetables, meat, cheese…the list goes on and on! My personal favorite in the morning is a little bit of salsa, a dash or two of hot sauce and a sprinkle of shredded cheese.
The options are endless.
